Chicken and Wild Rice - Crockpot

Ingredients - 



4 Boneless Skinless Chicken Breasts
1 Onion chopped
2 Cream of Mushroom Soup
2 boxes Uncle Ben`s Long Grain and Wild Rice




Instructions - 
Place chicken in bottom of slow cooker. Sprinkle chopped onion over top.
Top with cream soup. Cover and cook on low 7-8 hours. Cook rice according
to package directions*. Before serving, stir rice in. Serve hot.

*Can cook rice the night before and place in refrigerator. Before serving, stir
cold rice in and let cook for another ten minutes or until rice is heated through.

Air Fried Philly Cheesesteak Eggrolls


2 tbsp Clarified Butter or Ghee 
1 large Bell Pepper - green - chopped
1 medium Onion - chopped
1 pound Steak - sliced thin, cut small
6 slices Provolone cheese
12 Egg Roll Wrappers

1. In a large pan, melt half of the butter/ghee over medium high head and add the bell pepper and onion. Allow to cook for 3-4 minutes or until softened.

2. Remove the vegetables from the pan, cover to keep warm. Melt the other half of the butter and add the steak to the pan. Add a little salt (to taste). Personal note: I HATE when a recipe says, "to taste."

3. Allow the steak to cook for 3-4 minutes or until browned. Add the bell pepper and onion back into the pan with the steak.

4. For each egg roll: Lay out an egg roll wrapper. I did mine on wax paper to make it easier. Lay it so it is like a diamond. Since I had never rolled an egg roll before, here's my description on how you do it. You are standing at home plate. Place half a slice of cheese on the wrapper, putting it where it just a bit closer to home plate than 2nd base. Do a quick blast of cooking spray from 1st base to 2nd base and then to 3rd base. Put about 3 tablespoons of the filling on the cheese. Fold home plate up over the filling. Roll it up slightly toward 2nd base. Fold 3rd base in toward the pitchers mound. Do the same with 1st base. Now finish rolling up to 2nd base. The cooking spray will help the roll "stick".

5. Put some of your eggrolls in the air fryer. Give them a quick spray with oil or the cooking spray. Cook at 400 degrees for 3 minutes. Turn the eggrolls over, spritz with oil or cooking spray again. Cook for another 3 minutes. That should give you a nice golden brown! Of course, adjust the time accordingly.

Italian Beef Soup



2 lbs Ground meat
1 cup Onion chopped
4 cloves Garlic minced
8 cups Beef Broth (14.5 oz)
2 Bell Pepper - red chopped
2 Zucchini quarter lengthwise, then slice
2 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Red Pepper flakes
6 Roma tomatoes diced
3 tbsp Fresh Basil chopped

In a large pot, cook the ground beef, onion, and garlic over medium heat, stirring to break up the meat, until the meat is browned. Drain off any fat.

Stir the broth into the pot. Stir in the bell pepper, zucchini, and seasonings. Bring to a boil.

Reduce the heat and simmer until the vegetables are tender, about 8-10 minutes.

Add the tomatoes and basil. Cook until heated through, about 2 minutes.

Remove from heat and serve.

Mexican Casserole


1 lb Ground meat
1 Onion chopped
1 pkg Taco Seasoning
1 can Bush`s Chili Beans
1 can Cream of Mushroom Soup
1 can Rotel Tomatoes
1/2 bag Tostitos Chips 20 oz crushed
8 oz Cheese - Cheddar (shredded)
(to taste) Sour Cream - 16 oz
(to taste) Salsa - medium

Brown ground meat with onion: drain. Add taco seasoning and chili beans. Spread in 9 x 13-inch dish. Crush chips and place on top of meat. Mix soup and tomatoes and spread on top of chips. Cover with shredded cheese. Bake at 350 degrees for about 15- 20 minutes or until cheese is bubbly. Serve with sour cream and salsa.

Chicken and Sausage Gumbo - Slow Cooker

3 cups Water
1 pound Boneless Skinless Chicken Breasts cut to bite-size
1 pound smoked sausage links, sliced
1 pound Okra, cut frozen 2 lb bag
1 Tomatoes - Diced (14.5 oz)
1/2 Bell Pepper - green diced
1 large Onion, diced
1/2 cup Celery, diced
2 cloves Garlic, minced
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Red Pepper
3 cups Minute Rice cooked

Place water in a Crock Pot and add Roux; stir. Add sausage, chicken, okra, onion, pepper, celery, garlic, salt, black pepper, and red pepper. Cover and cook on low heat for 6-7 hours, or on high heat for 3 hours. Skim off the fat, and serve over rice.

Indian style Okra

3 tbsp Butter
1 medium Onion, chopped
1lb Okra, fresh sliced
1/2 tsp Cumin, ground
1/2 tsp Ginger, ground
1/2 tsp Coriander, ground
1/4 tsp Black Pepper
Salt to taste
1 can Diced Tomatoes

Melt butter in a large skillet over medium heat. Add the onion, and cook until tender. Stir in the okra, and season with cumin, ginger, coriander, pepper and salt. Cook and stir for a few minutes, then reduce the heat to medium-low, and cover the pan. Cook for 20 minutes, stirring occasionally until okra is tender.

Broccoli Cheese Soup

2 sticks Butter
4 to 5 Green Onions, chopped
1 cup Flour (all-purpose)
4 cups Milk
2 rolls Garlic Cheese, chunked
1 lb Mild Mexican Velveeta, chunked
4 boxes Frozen Chopped Broccoli
4 cans Chicken Broth (or 7 cups)

Cook frozen broccoli according to package directions; drain. Saute green onions in melted butter. Add flour. Cook about 1 minute until smooth. Add milk slowly. Add cheeses. Cook and stir until melted. Add cooked broccoli and chicken broth until desired consistency is reached. Heat thoroughly.

Recipe can be cut in half.

Beef and Zucchini Stir Fry

1/4 cup Vegetable Oil
2.5 lb Round Steak cubed
1 bottle Kikkoman Stir-Fry Sauce
1-2 large Onion, sliced
1 or 2 fresh Carrots, sliced thin
1/2 Green Bell Pepper, sliced
1/2 Red Bell Pepper,sliced
2 large Zucchini cubed
3 cups Minute Rice cooked

Cook steak in oil in wok/skillet. When the steak is almost done, add stir-fry sauce, onions, carrots, and bell peppers. When the bell peppers are almost done, add the zucchini and cook until done.

Serve over rice.

Greek Chicken and Red Potatoes

3-4 Boneless Skinless Chicken Breasts
1 tsp Salt
1 tsp Black Pepper
1 large Onion sliced
10-12 new Red Potatoes - Small
2 tbsp Olive Oil
2 tsp Oregano
2 tsp Lemon Pepper Seasoning

First, wash and quarter as many red potatoes as you like and place them in the bottom of your slow cooker. Sprinkle lightly with salt and pepper. (I always spray my crock pot with Olive Oil Pam first, to make clean up easier.)

Cut a sweet onion into large chunks and toss into the slow cooker on top of the potatoes.

Place chicken on top of the potatoes and onion.

Drizzle chicken with olive oil. Sprinkle generously with oregano and lemon-pepper seasoning.

Turn crock pot to low and cook for 6-8 hours, or however long it takes in your crock pot.

Serve cooked chicken and potatoes with the delicious broth served over top.

Breakfast Casserole

1 stick Butter
1 lg Onion diced
2 large Russet Potatoes cut and diced thin
1 lb Sausage - smoked, links sliced
12 Egg(s) scrambled

Melt the stick of butter in a large pot at medium heat. Add the diced onion and saute for a few minutes.

Add the potatoes. Mix well, cover and stir occasionally.

When the potatoes are almost done, stir in the sausage and re-cover.

When the potatoes are done, pour the eggs over the mixture and cover. Stir once every minute or two until the eggs are all done.

Tamale Pie

1 pound Ground meat browned
1/2 cup chopped Onion
1/2 cup chopped Green Pepper
1 can Corn, whole kernel - drained
1/2 cup pitted Black Olives sliced
1/2 tsp Salt
3 tsp Chili Powder
1 tsp Black Pepper
2 cans Tomato Sauce - 8 oz
1 clove Garlic minced
1 tbsp Sugar
1 1/2 cups Cheese - Cheddar (shredded)

Mix browned meat with all ingredients EXCEPT cheese. Simmer 20 to 25 minutes.

Add cheese and stir until melted.

Pour into 10 x 6 x 1-1/2 inch baking dish.

Bake at 375 degrees for 1 hour and 15 minutes.

Potatoes O'Brien

1-1/2 Tbsp Butter
1-1/2 Tbsp Olive Oil
1 large Onion finely chopped
1/2 Bell Pepper - red finely diced
1/2 Bell Pepper - green finely diced
2 pounds New Potatoes (or Small Round Potatoes) peeled and cut 1/2 inch cubes
2 Tbsp Parsley

1. In a large frying pan over medium-high heat, melt 1/2 tablespoon of the butter with 1/2 tablespoon of the olive oil.
2. Add the onion and saute, stirring occasionally, until golden brown and just beginning to caramelize, 5-7 minutes.
3. Do not allow the onion to scorch.
4. Add the red and green peppers and saute until beginning to soften, 3-5 minutes longer.
5. Transfer to a serving bowl and set aside.
6. Add 1/2 tablespoon each of the remaining butter and olive oil to the same pan.
7. Add half of the cubed potatoes and cook, turning to brown all sides, 5-7 minutes.
8. If the potatoes are too dry, add a little more butter or oil.
9. Transfer the browned potatoes to the bowl holding the pepper mixture.
10. Repeat with the remaining butter, olive oil and potatoes.
11. Return the mixture to the pan.
12. Raise the heat to high so that it quickly warms through.
13. Remove from the heat and season to taste with salt and pepper.
14. Add the parsley and stir to combine.
15. Return to the serving bowl and serve immediately.

Baked Fajitas

2 pounds - Boneless Skinless Chicken Breasts cut into strips
4 tbsp Vegetable Oil
4 tsp Chili Powder
3 tsp Cumin, ground
1 tsp Garlic Powder
1 tsp Oregano
1/2 tsp Seasoned Salt
2 cans Rotel Tomatoes
2 medium Onion sliced
1 Bell Pepper - red cut into strips
1 Bell Pepper - green cut into strips

Preheat the oven to 400 degrees. Place chicken strips in a greased 13x9 baking dish.

In a small bowl, combine the oil, chili powder, cumin, garlic powder, oregano, and salt. Drizzle the spice mixture over the chicken and stir to coat.

Add the tomatoes, peppers, and onions to the dish and stir to combine.

Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.

Corn Casserole

Corn Casserole1 can Corn, Cream-style
1 can Corn, whole kernel - Can (SB)
1 stick, melted Butter - sticks (salted)
1 Egg(s)
1/2 cup Water
1 Cornbread Mix
1 small chopped Onion

Mix all ingredients together (add salt and pepper to taste) and pour into a
baking dish. Bake at 350 degrees for 45 minutes.

Shrimp and Yellow Rice

Shrimp and Yellow Rice
2 lb Shrimp, peeled, raw
1 pkg Yellow Rice
1 can Cream of Mushroom Soup
1 can Rotel Tomatoes
1 med Onion, chopped
1 med Bell Pepper - green, chopped
1/4 c (1/2 stick) Butter

Saute shrimp and margarine until pink, then add onion and bell pepper. Saute 5 minutes more. Cook rice according to directions. Combine shrimp mixture and rice. Add soup and tomatoes. Pour into 13 x 9 greased casserole dish. Bake at 350 for 15 minutes. Serves 6 to 8.

Crawfish Etouffee`

Crawfish Etouffee`
3/4 cup Cooking Oil
3/4 cup Flour (all-purpose)
1 chopped Onion
1/4 cup chopped Celery
1 clove Garlic
1 chopped Green Pepper
1/4 cup Butter
1 can Tomato Paste
3 cups Water
2 Chicken boullion cubes
2 tsp Salt
2 tsp Black Pepper
1 tsp (optional) Tabasco sauce
1 tsp Paprika
2 pounds Crawfish Tails

Cook roux from oil and flour in microwave. (Put oil and flour in microwave safe bowl. We like to use 8 qt Pyrex measuring cup. Stir. Cook on High 2 minutes. Stir. Continue cooking for 1 minute intervals and stirring until roux is the color of a penny. CAUTION: ROUX IS VERY HOT!) Immediately add onion, celery, garlic, and green pepper and stir. Vegetables will cook in the hot roux. 


In a small skillet, melt butter and then add tomato paste.  Saute paste in butter until smooth and thick, about 5 minutes. Combine paste mixture and roux in dutch oven. Pour in broth (water with melted bouillon cubes) and add balance of seasonings. Cook on medium heat for 30 minutes. Add crawfish tails 5 minutes before serving. Serve over rice. 

Pepper Steak

Pepper Steak
2 pounds Flank steak
2 tbsp Cooking Oil
1 medium Onion, chopped
1 pkg Brown Gravy Mix
1 1/4 cups Water
1 tbsp Soy Sauce
2 large Green Pepper, cut in thin strips
1 large Tomatoes, cut in wedges

Thinly slice steak diagonally. Brown with onion in oil. Stir in gravy mix, water, and soy sauce. Stir until thickened. Cover and simmer 30 minutes. Add green peppers and tomato. Simmer 10 minutes. Serve over rice.

Nanny's Cornbread Dressing

Cornbread Dressing
1 cup Cornmeal, self-rising
1 1/2 cup Flour (self-rising)
1 Egg(s)
1/2 cup Cooking Oil plus small amount (*see below)
1 1/2 cup Milk
2-3 Chicken - Boneless Skinless Breast, boiled and diced (save broth)
4 Egg(s), boiled and diced
1 Onion, diced
4 stalks green onions, diced

Make Cornbread:
Heat oven to 400 degrees. Mix cornmeal, flour, 1 egg, 1/2 cup cooking oil, and milk. Put enough cooking oil* in the bottom of an oven-safe skillet (cast iron is best) to cover the bottom. Preheat the skillet and oil. (Oil is ready when a drop of mixture sizzles in pan.) Pour mixed ingredients into skillet. Bake 15-17 minutes until center springs back. Broil until golden brown. Set aside.

Cook chicken. Save 4 cups of broth. Set aside.

Boil Eggs. Set aside.

Cook onions and green onions in oil*. Set aside.

After everything is done, combine all ingredients including saved broth and put in 9x13 pan. Cook at 350 for 30 minutes.

Beef Taco Foldovers

1/2 lb Ground meat
1/4 cup Onion, chopped
1/2 cup Black Beans (15 oz), drained
1 8 oz can Tomato Sauce
1 tbsp Taco Seasoning
1 can Biscuits, Pillsbury Grands! 
1 cup (4 oz) Cheddar Cheese, shredded
Salsa for garnish
Sour Cream for garnish

Heat oven to 375. Cook groundmeat and onions until brown, drain. Stir in beans, tomato sauce, and seasoning mix. Simmer 3-5 minutes, stirring occasionally, until liquid is absorbed. Seperate dough into 5 biscuits. Press or roll each to form 5-inch round. Spoon 1/2 cup meat mixture onto center of each flattened biscuit. Sprinkle cheese evenly onto biscuit. Fold half of biscuit over filling; press edges with fork to seal. Place on ungreased cookie sheet. Bake 12-15 minutes or until golden brown. Top with salsa and sour cream. 


YIELD: 5 sandwiches

Taco Soup with Black Beans

1 pound Ground meat, browned and drained
1 can Crushed Tomatoes
1 can Corn, whole kernel - Can (SB), undrained
1 can Black beans, undrained
1 can Kidney Beans, undrained
1 pkg Ranch Dressing Mix
1 pkg Taco Seasoning
1 small Onion, chopped
1 bag Chips, Fritos or Tostidos
Cheese - Cheddar (shredded), 1 cup
1/2 cup Sour Cream

Combine all ingredients except chips, shredded cheese, and sour cream in crock pot.

Cover and cook on LOW 4 to 6 hours.

Garnish individual servings with chips, cheese, and sour cream.

Makes 6-8 servings. This is an easy recipe to double.
